Leftover Haloween Candy - Try This Simple Snickers Dulce De Leche Terrine


1. Line an 8-by-4 ½-inch loaf pan with parchment paper, leaving an overhang. Cut 14 Snickers Fun Size Bars in thirds (17 grams each; about 1 ½ cups total); arrange on the bottom of the pan. Top with 2 pints softened dulce de leche ice cream.


2. Press gently to settle the ice cream; freeze until firm, 6 hours. Invert onto a plate and slice.

Mmm good and so simple!

BBQ Outside The Box

I'm a bit of a "foodie" and love to cook but I have never been one to stay "in the box" or follow a recipe. Mr. snow has been a courageous test subject and, lucky for him, I have had more triumphs than tragedies. Did I mention I never follow recipes? There is no better challenge than eating at a restaurant and then recreating the food at home, only tastier - and healthier - than the restaurants!
It's time to try a new and lighter twist for your summer BBQ. A favorite of ours...homemade and organic black bean burger on a toasted Ciabata roll drizzled with olive oil, roasted/smashed garlic and vegan cheddar slices.
It's stuffed with pesto, 3 cheese vegan shred mix of Mozzarella, Romano, Parmesan and lots of spices for a kick. Try some shredded carrots, yellow squash, onion in your mixture.
Looks amazingly like a "regular burger." The outside of the burger forms a seared crispy, cheesy crust.
Grill some onions, top with lettuce, tomato and condiments of your choosing. Yum...I'm getting hungry. Happy grilling!
